Tasty Tuesday: Buffalo Chicken Meatballs

I am slowly and steadily moving my healthy recipes over from my food blog, in a searchable index. I wanted my healthy recipes to have a proper home, on a blog with health is the focus. And, after spending the last three years as a food blogger, I have been itching to post new recipes. Since I am turning over a new leaf and simplifying all of the aspects of my life, moving all of the things that are important to me to one home is an exciting thing to do.
This also means any new recipes will be posted here. Something else new – I will be including calories and fat grams for each recipe. Sorry, since I don’t do weight watchers, I won’t have points information.
What better day to start than today?
Today will be a tasty Tuesday!
I don’t know about you, but I love wings. I also love hot sauce. Putting hot sauce on other things just doesn’t cut it for me when I am craving wings. But who needs all of the butter in the Buffalo Sauce, all of the fat from the skin of the wings, deep fried? Even if you try to be health conscious and bake your wings, the skin and the fat are still present.
I set out to find something that will fill the void, and I found it!
These lil meatballs are so tasty. I made them as an experiment a few months ago. I wasn’t sure what Randall would think of them, but he loved them! Daniel likes them sans sauce, too. I think I made them three times in about a week and a half. Now, I just make gargantuan batches of them and freeze them, to have them ready whenever a craving strikes.
Our family has a tradition on Christmas Eve that we just have finger foods for dinner. It started out because my Mom cooks all day on Christmas Eve, preparing for the dinner the next afternoon, and doesn’t want to cook another full meal. It creates a great party atmosphere and is fun for the kids. You know, crackers, cheese, chips and dips, veggie trays and the like. I am taking a batch of these bad boys with me to my parent’s, so while everyone else is chowing down on chicken wings and lil smokies (at 14 grans of fat per serving). we’ll have something delicious that won’t have us feeling guilty while we wait for Santa later that night!
Next time you have a craving for wings, give these meatballs a try.
You’ll feel better about yourself while you’re licking the sauce off of your face.
Ingredients
- 20-24 oz boneless skinless chicken breast
- 1 small red onion, quartered
- 1 sleeve (38) Ritz Crackers
- 2 eggs
- 3 tbsp fresh parsley
- 3 tbsp hot sauce - I use Frank's Red Hot
- 1 tsp garlic powder
- salt and pepper to taste
- for the sauce: 3 tbsp light butter spread - I use I Can't Believe Its Not Butter Light
- 1/4-1/3 hot sauce (Frank's Red Hot)
Instructions
- add chicken to your food processor and pulse to chop - if you do not have a food processor, you can use ground chicken breast
- add remaining ingredients (through the salt and pepper) and blend together on low setting until thoroughly mixed - if you do not have a food processor, mince your onion and parsley, crush the crackers and mix all ingredients in a bowl
- using a small scoop or tablespoon measuring spoon, scoop out the mixture and roll it into 1 1/2-2 inch balls - the mixture will be soft
- place the balls onto a parchment lined cookie sheet and bake at 350 for 15-20 minutes, or until firm and slightly browned
- Melt butter spread in a bowl and add hot sauce, mixing together thoroughly
- toss the cooked meatballs in the sauce to coat before serving
